Parses a method definition’s schemas.

parameters is a schema in its own right; input and output are wrappers carrying an encoding and an optional schema. A body with an encoding and no schema — com.atproto.sync.getRepo returns a CAR file — is None rather than an error, because there is nothing to check and that is the document saying so.
